{"id":3130,"date":"2019-12-18T12:00:43","date_gmt":"2019-12-18T10:00:43","guid":{"rendered":"https:\/\/getitmagazine.co.za\/pretoria\/?p=3130"},"modified":"2024-05-30T15:40:57","modified_gmt":"2024-05-30T13:40:57","slug":"lemongold-glazed-pork-belly-with-pistachio-granola","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/pretoria\/blog\/2019\/12\/18\/lemongold-glazed-pork-belly-with-pistachio-granola\/","title":{"rendered":"LemonGold-glazed pork belly with pistachio granola"},"content":{"rendered":"<p><label>Prep time: <\/label>15 minutes<\/p>\n<p><label>Cooking time: <\/label>3 hours<\/p>\n<section class=\"articles__section--ingredients\">\n<header><span class=\"firstWord\">Ingredients<\/span><\/header>\n<div>\n<ul>\n<li><span class=\"recipe-sub-category\">For the pork belly:<\/span><\/li>\n<li>1 x 1.8 kg pork belly<\/li>\n<li>50 g coarse salt<\/li>\n<li>1\u20443 cup olive oil<\/li>\n<li>2 T fennel seeds<\/li>\n<li><span class=\"recipe-sub-category\">For the glaze:<\/span><\/li>\n<li>800 g Woolworths LemenGolds, peeled<\/li>\n<li>2 cups orange juice<\/li>\n<li>200 g brown sugar<\/li>\n<li>2 t nutmeg<\/li>\n<li>1 bunch fresh thyme<\/li>\n<li>20 g fresh ginger, grated<\/li>\n<li><span class=\"recipe-sub-category\">For the pistachio granola:<\/span><\/li>\n<li>150 g rolled oats<\/li>\n<li>30 g sesame seeds<\/li>\n<li>1 T cumin seeds<\/li>\n<li>1 T ground coriander<\/li>\n<li>1 t garam masala<\/li>\n<li>2 T smoked Spanish paprika<\/li>\n<li>4 T olive oil<\/li>\n<li>100 g pistachios, shelled and chopped<\/li>\n<li>5 g coconut flakes<\/li>\n<\/ul>\n<\/div>\n<\/section>\n<section class=\"articles__section\">\n<header>Method<\/header>\n<div>\n<ul>\n<li>Preheat the oven to 250\u00b0C. Place the pork belly on a chopping board and carefully score the skin, making sure the incisions are around 1 cm apart. Pat dry using kitchen paper.<\/li>\n<li>Rub the pork belly with the salt, olive oil and fennel seeds. Roast for 30 minutes to crisp up the skin, then reduce the temperature to 200\u00b0C and roast for a further 1\u00bd\u20132 hours.<\/li>\n<\/ul>\n<p><strong>To make the glaze,<\/strong>\u00a0place all the ingredients into a saucepan and simmer for 30 minutes, stirring occasionally, or until the LemenGolds are soft and the orange juice syrupy.<\/p>\n<p><strong>To make the pistachio granola,<\/strong>\u00a0toss all the ingredients except the pistachios and coconut and place on a lightly greased baking sheet. Roast for 20\u201325 minutes, or until fragrant and golden brown. Add the pistachios and coconut for the last 5 minutes of roasting.
