{"id":4168,"date":"2020-01-21T12:00:40","date_gmt":"2020-01-21T10:00:40","guid":{"rendered":"https:\/\/getitmagazine.co.za\/pretoria\/?p=4168"},"modified":"2024-05-30T15:40:35","modified_gmt":"2024-05-30T13:40:35","slug":"easy-vegetarian-lasagne-the-family-will-love","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/pretoria\/blog\/2020\/01\/21\/easy-vegetarian-lasagne-the-family-will-love\/","title":{"rendered":"Easy vegetarian lasagne&#8230; the family will love!"},"content":{"rendered":"<p>Serves: 6-8<\/p>\n<p>Prep time: 30 minutes<\/p>\n<p>Cooking time: 1 hour, 30 minutes<\/p>\n<p>&nbsp;<\/p>\n<p>Ingredients<\/p>\n<p style=\"font-weight: 300\">Tomato-based Sauce<br \/>\n4 onions, diced<br \/>\n30ml olive oil<br \/>\n4 cloves garlic, minced<br \/>\n2 teaspoons mixed herbs<br \/>\n1 tablespoon tomato paste (optional)<br \/>\n3 tins (400g each) crushed tomatoes<br \/>\n1 teaspoon salt<br \/>\n1 teaspoon sugar<br \/>\n\u00bc cup water<br \/>\nFreshly cracked black pepper<\/p>\n<p style=\"font-weight: 300\">Spinach Sauce<br \/>\n2 tablespoons olive oil<br \/>\n3 onions, diced<br \/>\n400g de-stemmed, chopped spinach<br \/>\n500g Ricotta Cheese<br \/>\nSalt and pepper<\/p>\n<p style=\"font-weight: 300\">Lasagne<br \/>\n16 pieces lasagne<br \/>\n500g Mascarpone cheese, whipped<br \/>\n120g Parmesan, grated<br \/>\nSalt and freshly cracked black pepper<\/p>\n<p><strong>Method<\/strong><\/p>\n<p style=\"font-weight: 300\">Tomato-based sauce<\/p>\n<ol style=\"font-weight: 300\">\n<li>In a large pot, heat the oil and once hot, add the onions. Saut\u00e9 until soft. Now add the garlic and mixed herbs and cook for another 2 minutes, being careful not to let the garlic burn.<\/li>\n<li>Add the tomato paste and cook for another minute or so.<\/li>\n<li>Add the tinned tomatoes, sugar, salt, water and freshly cracked black pepper.<\/li>\n<li>Allow to simmer on the stove top for an hour to an hour and a half to develop flavours and for the sharpness of the tomatoes to soften and sweeten.<\/li>\n<li>Set aside.<\/li>\n<\/ol>\n<p style=\"font-weight: 300\">Spinach Sauce<\/p>\n<ol style=\"font-weight: 300\">\n<li>In a medium to large frying pan, heat the oil and once hot, add the onions and allow to saut\u00e9 until soft.<\/li>\n<li>In the meantime, steam the spinach in a double boiler until cooked (only takes a few minutes) or microwave in a covered container for 2-3 minutes. Drain the liquid and add to the onions. Add the ricotta cheese, salt and pepper to taste and mix through.<\/li>\n<li>Using a handheld blender, blend until the spinach and ricotta mixture is relatively smooth and spreadable.<\/li>\n<\/ol>\n<p style=\"font-weight: 300\">Layering Lasagne<\/p>\n<ol style=\"font-weight: 300\">\n<li>In a medium-sized lasagne dish or rectangular ovenproof dish, add a layer of the tomato sauce followed by half the Parmesan then a layer of lasagne.<\/li>\n<li>Add a layer of spinach sauce, topped with a third of the mascarpone and then another lasagne layer.<\/li>\n<li>Add another layer of spinach sauce and another third mascarpone and another layer of lasagne.<\/li>\n<li>Now add a thin layer of tomato sauce, a layer of lasagne and then the remaining tomato sauce and another third mascarpone.
