{"id":4422,"date":"2020-01-29T12:00:48","date_gmt":"2020-01-29T10:00:48","guid":{"rendered":"https:\/\/getitmagazine.co.za\/pretoria\/?p=4422"},"modified":"2024-05-30T15:40:35","modified_gmt":"2024-05-30T13:40:35","slug":"lunchbox-friendly-fish-cakes-the-kids-will-love","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/pretoria\/blog\/2020\/01\/29\/lunchbox-friendly-fish-cakes-the-kids-will-love\/","title":{"rendered":"Lunchbox-friendly fish cakes the kids will love"},"content":{"rendered":"<p><label>Serves: 4-6<\/label><\/p>\n<p><label>Prep time: 15 minutes<\/label><\/p>\n<p><label>Cooking time: 15 minutes<\/label><\/p>\n<section class=\"articles__section--ingredients\">\n<header><span class=\"firstWord\">Ingredients<\/span><\/p>\n<\/header>\n<div>\n<ul>\n<li>2 T canola oil<\/li>\n<li>1 small red onion, finely chopped<\/li>\n<li>2 cloves garlic, finely chopped<\/li>\n<li>1 spring onion, roughly chopped<\/li>\n<li>1 t butter chicken curry spice or mild curry powder, heaped<\/li>\n<li>375 g butternut peeled, cooked and mashed (it should be dry, not too wet)<\/li>\n<li>60 g flour, plus extra for dusting<\/li>\n<li>120 g panko breadcrumbs<\/li>\n<li>4 x 170 g cans tuna in brine, drained<\/li>\n<li>sea salt and freshly ground black pepper, to taste<\/li>\n<li>1 T smoked BBQ sauce<\/li>\n<li>Woolworths tartare sauce, for serving<\/li>\n<li>Seasonal fruit on skewers, or a green salad, for serving<\/li>\n<\/ul>\n<\/div>\n<\/section>\n<section class=\"articles__section\">\n<header>Method<\/p>\n<\/header>\n<div>\n<p>Heat the oil in a large pan and saut\u00e9 the onion for 4 minutes until soft and translucent. Add the garlic and spring onion and cook for 1 minute. Add the curry powder and stir for 30 seconds, taking care not to burn the spice.<\/p>\n<p>Add the mashed butternut and stir and until combined. Add the flour, a heaped spoonful at a time, and stir well. Stir in the drained tuna until well combined. Season with salt and pepper.<\/p>\n<p>Switch off the heat and allow the mixture to cool slightly until cool enough to handle. In a tray or plate, mix the extra flour and breadcrumbs. Heat a nonstick pan with enough oil for shallow frying. Shape 2 T spoonful of the mixture into a ball using your hands. Repeat with the remaining mixture.<\/p>\n<p>Dust the fish cakes in the breadcrumb-and-flour mixture flattening them slightly to form mini fish cakes. Cook each one oil 1\u00bd minutes on one side and 1 minute on the other.<\/p>\n<p>Gently remove from the pan and drain on wire rack lined with kitchen paper.
