{"id":4681,"date":"2020-02-16T09:00:10","date_gmt":"2020-02-16T07:00:10","guid":{"rendered":"https:\/\/getitmagazine.co.za\/pretoria\/?p=4681"},"modified":"2024-05-30T15:40:07","modified_gmt":"2024-05-30T13:40:07","slug":"char-grilled-nectarine-and-ricotta-bruschetta","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/pretoria\/blog\/2020\/02\/16\/char-grilled-nectarine-and-ricotta-bruschetta\/","title":{"rendered":"Char-Grilled Nectarine and Ricotta Bruschetta"},"content":{"rendered":"<p>Serves: 4<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>4, firm, ripe nectarines, de-pipped and halved<\/li>\n<li>\u00bd cup ricotta cheese<\/li>\n<li>Finely chopped parsley<\/li>\n<li>Grated peel of 1 small lemon<\/li>\n<li>Olive oil, salt and milled pepper<\/li>\n<li>8 slices ciabatta, toasted<\/li>\n<li>Balsamic glaze<\/li>\n<li>Salt and milled pepper<\/li>\n<li>Few handfuls watercress or wild rocket<\/li>\n<li>olive oil, salt and pepper<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Method<\/p>\n<ul>\n<li>Heat a griddle pan until smoking hot.<\/li>\n<li>Place nectarines (or peaches) cut side down and cook until griddle lines appear. Remove and set aside.<\/li>\n<li>Mash ricotta with parsley and lemon. Add a splash of olive oil and season to taste.<\/li>\n<li>Top ciabatta toasts with ricotta, slice nectarines into quarter and arrange on top of ricotta.
