{"id":5082,"date":"2020-03-16T12:00:07","date_gmt":"2020-03-16T10:00:07","guid":{"rendered":"https:\/\/getitmagazine.co.za\/pretoria\/?p=5082"},"modified":"2024-05-30T15:39:41","modified_gmt":"2024-05-30T13:39:41","slug":"samp-and-bean-risotto-with-poached-eggs-and-parmesan-corn-shards","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/pretoria\/blog\/2020\/03\/16\/samp-and-bean-risotto-with-poached-eggs-and-parmesan-corn-shards\/","title":{"rendered":"Samp-and-bean risotto with poached eggs and Parmesan corn shards"},"content":{"rendered":"<section class=\"articles__section--ingredients\">\n<header><label>Serves: 4<\/label><\/p>\n<p><label>Prep time: 15 minutes<\/label><\/p>\n<p><label>Cooking time: 20 minutes<\/label><\/p>\n<p><span class=\"firstWord\">Ingredients<\/span><\/p>\n<\/header>\n<div>\n<ul>\n<li><span class=\"recipe-sub-category\">For the Parmesan corn shards:<\/span><\/li>\n<li>100 g Parmesan, finely grated<\/li>\n<li>1 &#8211; 2 cobs sweetcorn, cooked and kernels cut off<\/li>\n<li><span class=\"recipe-sub-category\">For the risotto:<\/span><\/li>\n<li>1 onion, finely chopped<\/li>\n<li>2 garlic cloves, chopped<\/li>\n<li>2 T butter<\/li>\n<li>2 x 410 g cans Woolworths samp-and-bean mix, drained and rinsed<\/li>\n<li>1 cup cream<\/li>\n<li>Sea salt and freshly ground black pepper, to taste<\/li>\n<li>4 free-range eggs, poached, for serving<\/li>\n<li>Italian parsley, finely chopped, for serving<\/li>\n<li>burnt butter, for serving<\/li>\n<\/ul>\n<\/div>\n<\/section>\n<section class=\"articles__section\">\n<header>Method<\/p>\n<\/header>\n<div>\n<ul>\n<li>Preheat the oven to 200\u00b0C.<\/li>\n<li>To make the Parmesan corn shards, sprinkle the corn onto a silicone baking mat and top with the grated Parmesan.<\/li>\n<li>Bake until golden brown and slightly crisp.
