{"id":5085,"date":"2020-03-15T09:00:47","date_gmt":"2020-03-15T07:00:47","guid":{"rendered":"https:\/\/getitmagazine.co.za\/pretoria\/?p=5085"},"modified":"2024-05-30T15:39:41","modified_gmt":"2024-05-30T13:39:41","slug":"african-oxtail-sunday-lunch-just-got-tastier","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/pretoria\/blog\/2020\/03\/15\/african-oxtail-sunday-lunch-just-got-tastier\/","title":{"rendered":"We know it&#8217;s not winter yet, but how delicious does this Kerala king prawn and coconut curry look?"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n500g\/1lb 2oz raw tiger prawns, shells off and de-veined<br \/>\n1 tbsp fresh lemon juice<br \/>\n3 tbsp sunflower oil<br \/>\n1 onion, grated<br \/>\n\u00bd tsp ground turmeric<br \/>\n6 whole cardamom pods, lightly crushed to split open<br \/>\n1 tsp chilli powder<br \/>\n1 cinnamon stick<br \/>\n3 garlic cloves, finely grated<br \/>\n2.5cm\/1in piece root ginger, finely grated<br \/>\nsmall bunch fresh coriander<br \/>\n175ml\/6 fl oz coconut cream<br \/>\nsalt<br \/>\nTo serve<br \/>\nplain boiled rice or chapattis, to serve<\/p>\n<div class=\"google-auto-placed ap_container\"><\/div>\n<ul>\n<li><strong>Method<\/strong><br \/>\nToss the prawns with the lemon juice in a shallow non-metallic dish and leave to marinate while you make the sauce.<\/li>\n<li>Heat a heavy-based pan with two tablespoons of the oil and then add the onion. Cook for 2-3 minutes until softened but not coloured, then add the turmeric, cardamom pods and chilli powder. Cook for 1-2 minutes until fragrant, stirring constantly.<\/li>\n<li>Stir the remaining oil into the pan with the cinnamon, garlic and ginger. Cook for another 1-2 minutes until the garlic and ginger have softened and are cooked through.<\/li>\n<li>Reserve a few coriander sprigs for garnish and blend the remainder with the coconut cream in a mini food processor.<\/li>\n<li>Stir into pan with the onion and spice mixture until well combined, then bring to the boil. Reduce the heat and simmer gently for 1-2 minutes, then stir in the marinated prawns and season with salt.<\/li>\n<li>Continue to simmer for 1-2 minutes until the prawns are just cooked through and tender, stirring constantly.
