Head to the kitchen and give this yummy breakfast egg muffins a go"},"content":{"rendered":"<p>Makes 12<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>12 extra large eggs<\/li>\n<li>125ml cream<\/li>\n<li>\u00bd cup spring onions, chopped<\/li>\n<li>2 cloves garlic, grated<\/li>\n<li>1 chilli, diced<\/li>\n<li>1 large red bell pepper, diced<\/li>\n<li>1 cup corn, cut off the cob (or frozen)<\/li>\n<li>2 cups baby spinach<\/li>\n<li>60g (\u00bd cup) mozzarella, grated<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>Olive oil<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Preheat oven to 180\u02daC and grease a 12 cup cupcake tin.<\/li>\n<li>Add a drizzle of olive oil to a large frying pan.<\/li>\n<li>Add spring onion, garlic and chilli. Cook until fragrant.<\/li>\n<li>Add bell pepper and corn and cook until tender.<\/li>\n<li>Add spinach and cook until wilted and all water evaporates. Remove from the heat and stir through the cheese.<\/li>\n<li>Meanwhile, whisk eggs and cream together. Season well.<\/li>\n<li>Evenly distribute the veggies into the cupcake tin.<\/li>\n<li>Pour egg mixture over veggies.<\/li>\n<li>Bake in the oven for 20-25 minutes, or until golden and set.<\/li>\n<li>Serve warm and enjoy!<\/li>\n<\/ul>\n<p><strong>To freeze<br \/>\n<\/strong>Wrap cooked and cooled muffins tightly with cling film and place in a ziplock bag and freeze.<\/p>\n<p><strong>To reheat<br \/>\n<\/strong>Defrost muffins in the fridge or covered on the counter.<\/p>\n<p>Oven: Place muffins on a baking tray and reheat in the oven at 180\u02daC until warmed through.<\/p>\n<p>Microwave: For a quicker breakfast on the go option use the microwave. Place on a piece of paper towel on a microwave-safe plate.
