No time like the present to indulge in some comfort food"},"content":{"rendered":"<p>Check out this yummy Mammas Vetkoek stuffed with Chakalaka corned meat recipe.<\/p>\n<p>Nothing says comfort food better than a warm vetkoek and with the addition of Chakalaka Corned Meat, you\u2019re in for a real treat.<\/p>\n<p>Serves: 6<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>Chakalaka Corned Meat Filling:<\/p>\n<ul>\n<li>3Tbs Vegetable Oil<\/li>\n<li>1 medium onion, chopped<\/li>\n<li>3 cloves garlic, crushed<\/li>\n<li>\u00bd Tsp Cayenne Pepper<\/li>\n<li>2 cans Bull Brand Chakalaka Corned Meat<\/li>\n<li>2Tbs Barbeque Spice<\/li>\n<li>2 cups chopped vegetables (use whatever you have in the fridge -celery, beans, sweet potato, carrot) or 2 cups drained Rhodes Quality Mixed Vegetable<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p>Vetkoek<\/p>\n<ul>\n<li>1 kg flour, plus extra for dusting<\/li>\n<li>120g sugar<\/li>\n<li>1 10g Sachet Instant Yeast<\/li>\n<li>2Tbs Oil<\/li>\n<li>1Tbs Salt<\/li>\n<li>1l warm water, keep 1 cup extra (if dough is too stiff)<\/li>\n<li>Vegetable oil, for deep frying<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<p><strong>Chakalaka Corned Meat filling:<\/strong><\/p>\n<ul>\n<li>Heat the oil, in a large frying pan over medium-high heat.<\/li>\n<li>Season with salt and pepper.<\/li>\n<li>Add the onion, cayenne pepper and garlic and saut\u00e9 until the onion softens<\/li>\n<li>Add the corned meat, breaking it up with a spoon.<\/li>\n<li>Cook for 5 minutes until browned<\/li>\n<li>Stir in the barbeque spice and cook for one minute.<\/li>\n<li>Add chopped vegetables and peas, stirring until cooked through.<\/li>\n<li>Check seasoning.<\/li>\n<\/ul>\n<p><strong>Vetkoek<\/strong><\/p>\n<ul>\n<li>Mix the flour, sugar, yeast, oil, salt and warm water.<\/li>\n<li>Add extra water only if necessary. Knead thoroughly, then allow to prove for 30 minutes until double in original size (this will take longer on a cold day).<\/li>\n<li>Dust a tray with flour.<\/li>\n<li>Scoop up handfuls of dough and roll into balls. Place the vetkoek on the tray and allow to rise until doubled in size.<\/li>\n<li>Heat the oil in a deep saucepan.<\/li>\n<li>Deep fry a few vetkoek at a time (do not a lot of balls at the same time)<\/li>\n<li>Keep turning the balls after every 2 minutes.<\/li>\n<li>Check the vetkoek after 10 minutes \u2013 they should have risen to the top of the oil.
