Posh sardines on toast
Serve these, with a chilled Portuguese Vinho Verde, a lovely local sauv blanc, or go Spanish with a dry sherry, at your next poolside cocktail party.
Finely chop a small red chilli (remove seeds if you prefer less heat) and crush a large clove of garlic. Heat a little oil from the tin of sardines, add the chilli and garlic and cook over gentle heat, taking care not to burn the garlic. Once cooked, add the sardines until just warm. Toast slices of baguette, then pile the sardine mixture on top. Sprinkle with chopped parsley and a squeeze of fresh lemon.
