Devilled eggs for every occasion

We take a classic appetiser that was once on every party platter back in the day and add our own 2026 worthy twist. A good bite-size source of protein to impress guests.

  1. The classic OG devilled eggs

You’ll need: 6 large eggs (hard-boiled), 3 Tbsp mayonnaise, 1 tsp Dijon mustard, 1 tsp apple cider vinegar, salt and black pepper to taste, paprika (for garnish).

To make: Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let sit for 10–12 minutes. Immediately transfer eggs to an ice water bath for 5 minutes to stop cooking and make them easier to peel. Peel the eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a bowl. Mash the yolks with a fork (or blend for extra smoothness) and mix in the mayonnaise, mustard, vinegar, salt, and pepper until creamy. Pipe the mixture back into the egg whites. Garnish with paprika.

Using the above recipe as a guideline, turn your eggs into devilicious delights to serve to guests.

  1. Holy guacamole devilled eggs. Replace the mayo and apple cider vinegar with ripe mashed avocado and lime juice. Garnish with fresh coriander.
  2. BLT devilled eggs. Add crispy bacon, cocktail tomatoes and fresh basil. Fry bacon until crispy and cut in a small strip in proportion to place on top of devilled egg. Cut a cocktail tomato in two and place one half on top and garnish with a basil leaf.
  3. Pink-pickled devilled eggs. Soak boiled eggs in leftover beet juice from a jar or use canned or boiled beets and add vinegar (cider or white), sugar, and spices (like cloves or bay leaves) then simmer to make your own beet juice. Let the eggs soak for two to three days to turn the whites pink before devilling. Garnish with thin slices of celery.
  4. Hummus heaven devilled eggs. Replace the egg yolks with hummus for a nutty flavour. Garnish with a basil leaf.
  5. Sweet and spicy devilled eggs. Add 1/2 tsp yellow curry powder to classic yolk mixture. Once piped, top with a drizzle of mango chutney and fresh coriander and a sprinkle of curry powder in place of the paprika.
  6. The Greek devilled egg. Replace the mayo and apple cider vinegar with Greek yogurt and lemon juice for a tangier, lighter filling. Top with fresh dill or mint.
  7. Deep-fried devilled eggs. You’ll need flour, eggs, breadcrumbs, salt and pepper. Dip the egg white halves into the flour, then the beaten egg, and finally coat with seasoned breadcrumbs. Heat oil to 175°C to 185°C and fry until golden. Tip: Freezing the egg white halves for 30 minutes before breading can help them stay firm during the frying process. Top with yolk mixture and enjoy.
  8.  Jalapeño devilled eggs. Replace the mayo with cream cheese and garnish with thin slices of pickled  jalapeños.
  9. Soy-stained devilled eggs. Soak the boiled eggs in 1 cup soy sauce, 1 cup rice wine vinegar and 2 Tbsp Sriracha sauce. Replace apple cider vinegar with lime juice. Garnish with spring onion.
  10. Taco devilled eggs. Replace mayo and apple cider vinegar with sour cream and lime juice. Mix in ½ tsp of taco seasoning. Top with a taco or Doritos chip.
  11. Herby devilled eggs. Finely chop and mix in ¼ cup soft herbs (parsley and chives work well) and add a pinch of garlic powder to the mixture. Garnish with fresh parsley or chives.

Fun fact: Boiled eggs are tasty, filling, and good for your health at any age. While many know they are a good source of protein, they are also a source of vitamins, including A and D.
