Tiffany Francis, a top 10 Miss SA finalist, shares one of her favourite dessert recipes.

Twenty-two-year-old Tiffany Francis from Mulbarton has made it to the top 10 for Miss South Africa 2021. She is a professional model and the owner of Tiffany K Models, as well as a fashion design student.

“I felt incredibly blessed and grateful to make it to the finals. My Miss South Africa journey has been nothing short of remarkable and I am so excited to continue to influence positive impact.”

Her guilty pleasure is desserts. She shares with readers her recipe for flop-proof flapjacks with a delicious berry coulis.

Tiffany’s flop-proof flapjacks and berry coulis

Ingredients:

12 tablespoons of flour; 6 tablespoons of white sugar; 4 teaspoons of baking powder; A pinch of salt; 1 teaspoon of vanilla extract; 2 eggs; 1/2 cup of milk; cooking oil; mixed berries.

Method for flapjack batter:

Put all the dry ingredients in a bowl (flour, white sugar, baking powder, salt) and mix. Add eggs and vanilla extract to the dry ingredients, lightly mix with a whisk or mixer. Stop the mixing process when the batter becomes yellow and slightly thick, then add milk. Once the milk is added, continue the mixing process until the batter is creamy.

Add a spoonful of the batter to a preheated pan. Once bubbles form on the flapjack, they are ready to be flipped over. Take flapjack out when both sides are cooked.

Method for berry coulis

Put mixed berries (amount of your choice) in a saucepan. Add 2 tablespoons of sugar. Mix well and allow to come to a boil/simmer. When the berries are soft and a syrup has formed, the coulis is ready to serve. You can also serve with fresh cream/ice cream, syrup and your selection of fruit.
