Holiday baking … let’s go!

We’re looking forward to putting on our aprons and getting our hands dirty in the kitchen with the kiddies during the October school holidays. These decadent brownies, best served warm with a scoop of vanilla ice cream, are sure to do the trick!

When you’re stuck for ideas on how to keep the kids busy, why not whip out the baking gear and mix up something delicious with the kids? The Healthy Plate founder Payal Ramdhial is a dynamic, successful lifestyle-oriented blogger and mom of two little boys. She’s passionate about promoting healthy eating and creating recipes for wholesome, balanced meals and treats and she loves making irresistible, mouth-watering sugar-loaded sweet treats … just like these!

You’ll need:
Peanut butter filling: 6 tbsp creamy peanut butter (not ‘natural’). Brownies: 10 tablespoons butter
150g slab Cadbury dairy milk chocolate, 1 cup granulated sugar, 2 large eggs plus 1 egg yolk, 1 tsp vanilla essence, 1/2 cup all-purpose flour, 1/4 cup cocoa powder, 1/4 tsp fine salt, chopped peanuts to sprinkle.

To make: Peanut butter filling: Place the peanut butter in a heat-safe bowl and microwave for 20 to 30 seconds or until pourable (not super-hot). Preheat oven to 175°C. Line an 8-inch square pan with parchment paper, leaving an overhang. Spread the peanut butter in an even layer in the pan. Freeze for 1 hour or until solidified. Use the parchment to remove from pan and return peanut butter sheet to freezer. Keep frozen while making the brownie batter. Brownies: Line the square pan again with parchment paper, leaving an overhang. In a large microwave bowl combine the butter and 113g of chocolate. Microwave for 30 seconds, stirring in between, until the mixture is melted and smooth. Add the sugar to the hot butter mixture and whisk until combined. Allow to cool until just barely warm.
Add eggs, yolk and vanilla essence and whisk for about 1 minute or until very well combined.

Use a rubber spatula to stir in flour, cocoa powder and salt, until combined. Pour half of the batter into prepared pan and smooth out. Carefully place the frozen peanut butter sheet over the batter. Pour remaining batter on top, covering completely. Bake in the preheated oven for about 25 minutes, or until cooked through but still very slightly gooey in the centre. While the brownies are baking, towards the end add the rest of the dairy milk chocolate to the microwave with 1 tsp of butter until melted. Five minutes after taking the brownies out the oven pour melted chocolate over with sprinkled peanuts. Leave to cool in pan for 30 minutes. Remove from pan and allow to cool for another 30 minutes before slicing and serving.
