We are totally in love with the latest little gem we found while trolling social media during lockdown. Delicious Monster Café – who make all kinds of delicious artisanal edible things – have literally just opened shop (in their home kitchen for now of course) and are currently in the process of converting a 1978 VW camper van into a food truck from where they intend to sell to the public once our lives have returned to normal!

To help get you through the lockdown in one piece, and to keep you busy in the kitchen, they’ve kindly shared this easy recipe so that you can make your own bread at home.

What you need:

190g bread flour (white)

240 ml warm water

5g yeast

Method: Mix these together and leave in your fridge over night, covered with cling wrap.

When you are ready to make your bread add: 350g bread flour 240ml water 5ml salt (any) and mix with the starter from the fridge. Cover for 45 minutes and then gently fold the mixture over.

Cover AGAIN and leave for 30 minutes. Fold the mixture a second time. Re-cover the mixture for 30 minutes. Pour mixture onto a well floured surface and divide mixture in half to make two loaves. Carefully lift onto a baking tray lined with banking paper. Place in over preheated to 230 degrees celsius. Cook for 25 minutes. The bread should sound HOLLOW when lightly tapped on the underside.
