We’ve got a yummy and easy falafel recipe that brings together chickpeas and a handful of seasonings to create an enviable crispy-on-the-outside and fluffy and moist texture on the inside.

OVEN-BAKED MUSHROOM-FLAVOURED FALAFEL

Serves 1

You’ll need: 2 scoops (26g) Formula 1 Savoury Shake Mix from Herbalife; 120g chickpeas, drained; 1 egg white; 1 tsp cumin seeds; 1 tsp ground coriander seeds; 1 Tbsp each of chopped fresh mint and coriander, plus extra to garnish; ½ lemon, zested; 25g low-fat natural yogurt; black pepper

How to:
Preheat the oven to 200°C/ gas 6 and line a baking tray with baking paper.

Put the Formula 1 Savoury Shake Mix, chickpeas, egg white, cumin seeds, ground coriander seeds, chopped herbs and juice of the lemon into a food processor. Season with pepper and blend until smooth.

Spoon the mixture onto the prepared tray to make six oval shapes.

Bake for 15-20 mins until golden and cooked through.

Allow to cool slightly, then serve, garnished with the extra herbs, lemon zest and yogurt.
