Bourbon truffles with American Spirits

We joined Misology the Mixologist and Jenny Morris – aka the Giggling Gourmet – for a showcase of fine American spirits, including America’s native spirit – Bourbon. The two showed off their stuff with superb cocktails and Chocolate Bourbon Balls … and things just kept getting better and better (and certainly in the Get It camp, more and more merry).

A highlight from the Cheers! Spirits from the USA campaign were Jenny’s Bourbon Almond truffles … just the thing for you to make this festive season to share with friends and family. Here’s how …

You’ll need  half a cup almonds, finely crushed; one cup shortbread biscuits crumbs; one-eighth teaspoon salt; half a cup Bourbon; three-quarters of a  teaspoon almond essence; one cup icing sugar; three tablespoons unsweetened cocoa powder; one-and-a-half tablespoons honey; and to garish – three-quarters of a cup vermicelli chocolate for rolling the truffles.

Place the biscuit crumbs and nuts into the bowl of a food processor. Place the Bourbon, almond essence, icing sugar, cocoa powder and honey into a bowl and stir together until smooth. Spoon the Bourbon mixture into the biscuit mixture and pulse until just combined. Spoon the mixture into a bowl and gather it into a ball. Let it rest at room temperature for 60 minutes. Divide the mixture into balls and roll them in chocolate vermicelli, making sure they are covered evenly. This makes 12 truffles.
