Truffles for Easter

In the spirit of Easter, we asked Becs to share one of her favourite chocolate recipes with our readers and this is what she came up with. We have to admit, we tried them … and yes, they are every bit as delicious as they look!

“This recipe is one we have had in our Delish Sisters arsenal for years. It’s such a simple recipe and makes a beautiful gift or sweet ending to a dinner party. Have some fun with the flavour by adding dried spices, like cinnamon or cardamom, or even substituting the vanilla essence with rosewater or caramel essence. Nuts, seeds, cocoa, freeze dried fruit, toasted coconut and gold dust are some of our faves when it comes to the coating – so go ahead and get creative!”

Chocolate Truffles
(makes 30 truffles)
You’ll need: 320g dark, milk or white chocolate; 125ml cream; 1 tsp vanilla extract/paste; coating ingredients (get creative!)
To make: Break the chocolate up into a ceramic or glass bowl and melt over the stove in double boiler. Alternatively, put the bowl of chocolate into the microwave and melt in gradual 30-second bursts. Once the chocolate is melted and shiny, stir in the cream and vanilla essence. Cover the bowl with some cling film and refrigerate for at least two hours. Scoop the chocolate mixture and roll into balls. Coat with a topping of your choice and refrigerate again until you’re ready to serve!
