This September, let Ryno boost your braai with his favourite Chimichurri recipe which is a great accompaniment to meat and can even double up as a salad dressing!
Ingredients:
• 145ml Olive oil
• 2.5 tbsp of red wine vinegar
• 145 grams of finely chopped parsley
• 4-5 cloves of garlic, crushed
• 1 tbsp of finely chopped chilli
• 1 tsp dried oregano
• 1 tsp coarse salt
• Pepper to taste
Method:
1. Mix all ingredients together in a bowl. Allow to sit for 5-10 minutes to release all of the flavours into the oil before using. Ideally, let it sit for more than 2 hours, if time allows.
2. Chimichurri can be prepared earlier than needed, and refrigerated for
24 hours.
3. Use chicken or steaks, baste chimichurri instead of marinades while grilling or braaiing. However, you can use it as a marinade if you wish. Also, add a couple of tablespoons over your steak to serve.
