Method
- Prepare dough:
- In a large bowl, combine flour, salt, sugar, yeast, and optional flavourings.
- Stir in oil or butter. Gradually add lukewarm water, mixing until a soft, slightly sticky dough forms.
- Knead on a lightly floured surface for 6–10 minutes until smooth and elastic.
- Place in an oiled bowl, cover with a damp cloth or cling film, and let rise in a warm place for 1–2 hours until doubled in size (or refrigerate overnight for deeper flavour).
- Shape “roosterkoek”:
- Knock back the dough, knead briefly, and divide into 6–8 equal portions.
- Shape into slightly flattened balls or squares, 1–2 cm thick. Dust lightly with flour.
- Cover and rest for 10–15 minutes.
- Air fryer setup:
- Preheat the air fryer to 180°C for 3–5 minutes.
- Line the basket with baking parchment or a silicone mat, lightly greased with cooking spray or oil.
- Cook “roosterkoek”:
- Place 2–4 dough pieces in the basket, ensuring they don’t touch.
- Air fry at 180°C for 8–12 minutes, turning halfway, until golden brown and hollow-sounding when tapped.
- Optional: Use the grill function for the last 1–2 minutes for a crispier crust.
- Serve hot:
- Split open and spread with butter. Serve with:
