When cooking only for yourself, it’s tempting to make do with a sandwich or scramble an egg. Carol Beckerman adds a bit of punch to solo food in 500 Meals for One. Planning, equipment and special diets are included, along with kick-start brekkies (spiced buttermilk pancakes); sandwiches and wraps; soups; yummy salads (cucumber, avo and bacon); simple meals like maple balsamic glazed pork chop or crab cakes with gingered pak choy; comfort food (cottage pie or lamb casserole with herb dumplings). Sweet treats include apple flan, lemon meringue pie and a quick chocolate mousse (yes to all three!). There are also vegetarian, vegan and gluten-free recipes included in this handy little cookbook.
