Summer on a plate

Sweet, juicy stone fruit, golden halloumi, salty prosciutto and fresh herbs come together in a colourful salad made for long summer lunches.

There are few things that say summer quite like perfectly ripe stone fruit. Peaches and nectarines are at their best when the days are warm, bringing a lovely balance of sweetness and gentle acidity to everything from breakfast bowls to desserts, and, perhaps most deliciously, salads.

For this one, we’re giving juicy peaches a little time on the grill, allowing their natural sugars to caramelise and their edges to become beautifully golden. Add salty, squeaky halloumi, delicate prosciutto, peppery rocket, fresh mint and crunchy pistachios, and you have a salad that manages to be both wonderfully fresh and seriously satisfying.

It’s the kind of dish that belongs in the middle of the table, ready to be shared with friends, preferably outdoors and with plenty of sunshine.

Grilled Peach, Halloumi & Prosciutto Salad

You’ll need: 3 ripe peaches or nectarines, halved and sliced; 200g halloumi, sliced; 6 slices prosciutto; 2 handfuls rocket; ½ cup fresh mint leaves; ¼ cup toasted pistachios, roughly chopped; 2 Tbsp olive oil; 1 Tbsp balsamic vinegar; 1 tsp honey; salt and freshly ground black pepper, to taste.

How to make: Heat a griddle pan or braai to medium-high. Brush the peaches and halloumi lightly with olive oil and grill for 2–3 minutes per side, until golden and lightly charred. Arrange the rocket on a serving platter and top with the grilled peaches, halloumi, prosciutto, mint and pistachios. Whisk together the remaining olive oil, balsamic vinegar and honey, then drizzle over the salad. Season with salt and pepper and serve immediately. Serves 4.

Make it your own: Add fresh figs or blueberries, swap the peaches for nectarines, or use soft goat’s cheese instead of halloumi for a creamier finish.

Serve with …

A chilled Sauvignon Blanc is a lovely match for this salad. Its bright acidity cuts through the salty halloumi and prosciutto, while its fresh, fruity character complements the sweet grilled peaches and herbs.
