Cook up a storm for mom this Mothers’ Day with Riversmead

With our Maestro’s recipe, spoiling your mom this year won’t be a challenge.

Riversmead Maestro Chef Naledi, a mother of two awesome children, tells us all about how being a mom is an up and down journey with more ups than downs. “It’s a fulfilling journey seeing your little babies grow daily, reaching milestones and achieving the goals they have set for themselves. Learning to understand their opinions and points of view is quite an important factor in parenting generally. One of the biggest highlights for me is seeing them become so independent.”

Mothers’ Day is about celebrating and acknowledging your mom and all that she does. Spend some quality time, put in that effort and really make her feel loved. Chef Naledi explained how she always looks forward to Mothers’ Day because she gets spoilt and spends time with her family. “From breakfast in bed prepared by them to late lunches (with daddy’s assistance), it’s so fulfilling to see them plan and execute their plans independently.”

Now here’s something for the moms. Cooking in Chef Naledi’s household is a family affair. Her children are involved in every meal from planning to grocery lists to doing the actual groceries and finally cooking. “One of our favourite meals is a creamy chicken lasagne so we make this every second week and I have taught them to cook basic meals for themselves.” >From a young age, she also taught them what a balanced lunch box entails. They pack their own lunch every day that is healthy and has what every great lunch box includes: a protein, grain/starch, fruit/vegetable as well as some water.

A tip for moms:

For easy and quick lunchboxes, use leftovers. An example is using leftover Riversmead chicken fillet for wrap filling, or even making chicken mayo sandwiches. You may use the fillet from the whole roast chicken made the previous day.

 

Marinated Riversmead Chicken Fillets

Ingredients:

6 Riversmead Chicken fillets, skinless, boneless and butterflied

Marinate Ingredients:

125ml Tomato Sauce

60ml Apple Cider Vinegar

2 Tbsp Brown Sugar

1/2 tsp Chilli Powder

1 Tbsp Crushed Garlic and Ginger

2 Tbsp Soy Sauce

Salt

Pepper

Method:

  1. Mix all marinate ingredients in a pot and simmer for 3-4 minutes
  2. Heat griddle pan and brush with oil
  3. Season chicken fillets with salt and pepper
  4. Place the fillets on the griddle and baste with the marinade
  5. Turn the fillets over after 2 minutes and baste the other side. Grill for an additional 2 Minutes. Serve warm

Tip: Garnish with sesame seeds.
