Rather obsessed with wontons, gyozas and dumplings – because the filling combinations are just as endless as the dipping sauces that can be rustled up, foodie Isla Rechner has put her own spin on it with these delicious crispy chicken and cabbage wontons. Try them at home. We promise you won’t be disappointed!
Crispy chicken and cabbage wontons – serves 4
40 store bought wonton wrappers (you can get these from Sun Sun Asian Market in Durban North)
600g chicken mince
1 cup finely shredded white cabbage
20g coriander, finely chopped
1 stick of lemongrass, outer part removed and finely chopped
20g finely chopped chives
15g fresh ginger, minced
2 cloves of garlic, crushed and finely chopped
1 egg
Salt for seasoning
Oil for deep frying
Method:
- Preheat your deep fat fryer to 180 degrees
- In a bowl, combine all your filling ingredients
- This is the fun part, the folding of the wonton wrappers. Taking a wrapper, place water around the edges and place a small teaspoon of chicken filling in the centre.
- Bring each corner of the wonton wrapper to the centre, sealing the edges.
- Working in batches, fry the wontons for 3-4 minutes until crispy and golden.

Soy dipping sauce
90ml soy sauce
90ml rice wine vinegar
15ml sesame oil
1 spring onion, finely chopped
- Mix all the ingredients together
