Cauliflower bean curry

With two types of beans, this recipe takes it to new heights and it’s easy to make on a budget too because you can use canned and frozen ingredients. The rich, spicy sauce is layered with garlic, curry powder and tomato paste while the green beans add a fresh and healthy crunch.

When it comes to the health benefits: Cauliflower is not only versatile to cook with, but it’s high in fibre and vitamin B – it’s also loaded with antioxidants. At the same time, green beans are packed with vitamin C, among other great nutrients.

Curried butternut red kidney bean and quinoa stew

This recipe contains a filling and delicious grain called quinoa that happens to be a superfood. The great thing about quinoa is that it takes on the flavour of whatever you cook it in so the more flavour the cooking sauce has, the more flavour your stew will have. Red kidney beans are a South African staple featuring in traditional dishes like Umngqusho and South African-style bean curries. This curry is loaded with butternut, kidney beans and quinoa for a delicious and hearty meal.

When it comes to the health benefits, quinoa is loaded with protein, potassium and iron. Red kidney beans are creamy and also filled with protein along with antioxidants and fibre. Butternut contains vitamins such as vitamin A, vitamin C, along with plenty of other nutrients.

Grilled chicken potato salad with spicy herb and pomegranate dressing

This warm salad recipe is great because it makes use of the leaner part of the chicken, the breast. It also uses baby spinach leaves which are tender and tasty in a salad. Add the deliciously sweet, spicy and salty dressing and this one is a sure winner for dinner.

When it comes to health benefits, spinach is full of iron, folate, and vitamins K, A, C, while pomegranate contains vitamin C and antioxidants.
