A cocktail of a different kind. We’d love a glass (or two) of this pomegranate cocktail with candy-striped beetroot, apples and celery

Ingredients

  • 4 cups pomegranate juice
  • 1 cup good-quality vodka
  • 1 candy-striped beetroot, peeled and thinly sliced into rounds
  • 2 lemon, juiced
  • 2 Granny Smith apples, thinly sliced into rounds
  • Celery stalks, shaved lengthways using a vegetable peeler
  • 175 g pomegranate rubies

 

Method
  • Combine the pomegranate juice, vodka and lemon juice in a large jug, stirring to mix well.
  • Layer the beetroot, apples and celery in a separate jug. Pour over the pomegranate cocktail and add the pomegranate rubies.
  • Fill 6 glasses with crushed ice and pour in the cocktail along with some of the beetroot, apple and celery.
