We’ve discovered a new fine-dining gem and it’s worth raving about!

Hidden in the leafy suburbs of Waterkloof Ridge, Tribute Restaurant at the Apogee Boutique Hotel & Spa is an absolute gem … a restaurant that sets high, higher, highest standards in terms exceptional food and service. We admit, for a moment, we did find ourselves debating whether to keep it a secret or tell everyone we know!

Headed up by chef Clayton Prescott, Tribute’s new a la carte menu is what food dreams are made of. With a decade and a half of experience under his toque, this executive chef and his equally brilliant team would like their ‘culinary philosophy, inspiration, and passion to reflect with each dish they present’. And it sure does.

Smoked trout terrine with apple and fennel Slaw.

Some of the creations on the menu that scream order-me-order-me are the grilled aged rib eye served with crayfish ravioli alongside pickled fennel, oyster mushroom, pea purée and beef jus; the cannelloni filled with springbok loin ragout, glossed with a rich sage and red wine jus and topped with teriyaki mushrooms and kale crisps; and the smoked trout terrine, dressed with a Dashi and chive vinaigrette with a herbed blood orange bruschetta, which is, trust us, absolutely to die for!

The vegetarian options are simply exquisite … think pickled pineapple and cilantro Dim Sum with yuzu puree and a cranberry tuille filled with a Roquefort crema; chardonnay-braised leeks, whipped feta, poached pear, toasted hazelnuts served with sumac-dusted pani puri of crispy ricotta fritters served with a light green curry sauce … veggie yum!

For a sweet ending, we really recommend the apple Tart Tatin served with vanilla Chantilly cream, or the almond and cocoa crumble topped with 70 per cent dark Callebaut Cremieux, caramelised hazelnut ice cream and a butterscotch sauce.

Regardless of whether you’re in the mood for a hearty or light dish, you should find something to suit. Local flavours and ingredients are given a fresh new twist and the attention to detail … on point every time.

Chic, minimalist interior, strategically placed, hand-picked local art and beautiful views of the city … definitely, our go-to option if you want to impress. Booking is recommended.
