For each cocktail, you’ll need 15ml Bombay Gin, 10ml lime juice, 25ml grapefruit juice and a handful of ice, which you’ll shake frantically in a cocktail shaker. Strain into a chilled coupe glass, and top with 100ml Steenberg 1682 Pinot Noir Brut Cap Classique. Garnish with thyme sprig.
