Chicken & Cranberry Quiche fit for a high tea

In a lush tranquil setting located in the Northern parts of Bloemfontein is Mooi Kamer, a café that welcomes patrons with a colourful home décor shop that leads to a patio and garden coffee shop.

 

Get It magazine was treated to an elegant High Tea prepared by the owner Lucinda du Toit and her beautiful team, Annatjie Ackermann, and chef Juan-Marie du Toit.

Treats that you absolutely must serve at a High Tea?

There aren’t any rules when it comes to the food, but usually, the menu comprises of a tiered stand of petite savoury, and sweet appetisers. A good choice usually is triangle sandwiches, petite cakes, pastries, and scones – a combination of savoury and sweet. Whatever you and your guests love to indulge in. You can also add a variety of decadent chocolates.

 

“Traditionally, a High Tea is a British tradition for the working class, served at a high table and high back dining chairs at the end of a long work day. Meals consist of tier stands of savoury and sweet bite-size food served with mostly tea as a beverage. But today, a High Tea is much more than that. It is mostly for special high-class occasions and is mostly served with champagne and other beverages.”

  

Mooi Kamer’s famous Chicken & Cranberry Quiche Recipe: 

 

Filling:

6 eggs

1 cup of cream

1 cup of cream cheese

Half a packet of mushroom soup

1 cup mixed cheese, grated

150g pulled chicken

50ml cranberry syrup

Finely chopped dried cranberries (extra for garnish)

 

Method:

Mix the eggs, cream cheese, cream, soup powder, and the mixed cheese and set aside.

 

Crust:

1 cup mixed cheese, grated

150g salted butter

1 cup flour

1 egg (optional)

 

Method:

Mix all ingredients together until soft dough. Press the dough into a well-greased oven dish.

 

Pour the egg mixture into the dough crust base. Take the pulled chicken and chopped cranberries and place it in the egg mixture, as desired.  

 

Bake in oven at 180 degrees for about 50-60 min until golden brown. Serve with chopped cranberries and cranberry syrup.
