Chef Hlali Mzingwane from Kitchen360 in Bloemfontein has put together a refreshing and filling salad with a twist. The creamy biltong and peppadew braai salad is a perfect mix of healthiness and flavour, with a local favourite – biltong.
To make this dish you will need the following:
250g pasta (Fusilli or penne)
150g sliced or chopped biltong
1 cup cherry tomatoes, halved
½ cup cucumber, diced
¼ cup olives, sliced
½ cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons peppadew brine
Salt and black pepper to taste
Fresh parsley or basil for garnish
Let’s get cooking:
- Cook the pasta: Boil the pasta according to package instructions. Drain, rinse under cold water, and let it cool.
- Prepare the dressing: In a small bowl, mix the mayonnaise, Dijon mustard, and peppadew brine until smooth. Adjust seasoning with salt and pepper.
- Assemble the salad: In a large bowl, combine the cooked pasta, biltong, cherry tomatoes, cucumber, peppadews, and olives.
- Add the dressing: Pour the dressing over the salad and toss gently until everything is coated.
- Garnish: Sprinkle with fresh parsley or basil for a pop of colour.
Lastly, let your salad chill in the fridge for at least 20 minutes before serving to enhance the flavours.
