The woman behind the Krust

What began with a 17-year-old sourdough starter in a Franschhoek fine dining kitchen has grown into one of Bloemfontein’s emerging artisan bakeries. For pastry chef and entrepreneur Melozaan Raath, Krust Krate is more than a business – it’s a celebration of craftsmanship, community and a passion for traditional baking.

Some businesses begin with a carefully crafted business plan. Others start with a simple passion that slowly grows into something much bigger. For Melozaan, the foundation of Krust Krate can be traced back to a fine dining kitchen in Franschhoek and a sourdough starter that had been nurtured for nearly two decades.

While working at a prestigious restaurant in the Cape Winelands in 2022, one of Melozaan’s daily responsibilities was caring for the establishment’s prized sourdough starter. The process fascinated her and sparked a deep appreciation for the patience, skill and tradition that define artisan baking.

“My journey with Krust Krate began in 2022 while I was working at a fine dining restaurant in Franschhoek. One of my responsibilities was caring for the restaurant’s sourdough starter, which had been maintained and fermented for 17 years by our head chef, Chef Marcus,” she recalls.

When she eventually returned to Bloemfontein, she carried more than just experience with her. She brought home a vision. Recognising a gap in the local market for authentic artisanal sourdough products, she began what would become Krust Krate.

What started as a passion project quickly evolved into a growing business built on quality ingredients, traditional techniques and attention to detail. Even the bakery’s name tells a story. “The word Krust reflects one of the most distinctive characteristics of a well-made sourdough loaf – its beautifully developed, flavourful crust,” Melozaan explains. Over time, the name has come to embody the values that define the brand which are authenticity, quality and a respect for the slow, natural process of fermentation.

Unlike mass-produced bread, every Krust Krate product is crafted by hand in small batches. The focus is not on producing the highest volume possible, but rather on maintaining the quality customers have come to expect. “Our philosophy is simple: quality always comes before quantity. We also strive to make premium artisan sourdough accessible at fair and reasonable prices,” she says.

That approach appears to be resonating with customers. While the bakery’s classic white sourdough loaf remains a consistent favourite, Melozaan says something interesting has happened as the business has grown. Customers have begun embracing the full range of products on offer rather than gravitating toward a single bestseller.

“These days we find ourselves baking almost every product on our menu regularly. Customers are not just returning for one specific item, they are exploring and enjoying the full Krust Krate experience.”

Much of that growth can be attributed to the support of the local community. What started as a customer base has developed into something more meaningful, a network of loyal supporters who champion local entrepreneurship and appreciate the artistry behind traditional baking.

“The support from the local community has been one of the biggest reasons for Krust Krate’s success,” says Melozaan. Through word-of-mouth recommendations and repeat purchases, customers have helped transform a small baking venture into a recognised local brand.

Of course, growth comes with its own challenges. As demand has increased, Melozaan has had to find ways to scale operations while preserving the quality and personal touch that helped build the business in the first place. It is a balancing act familiar to many entrepreneurs, improving efficiency without losing authenticity.

Yet through the early mornings, long days and growing responsibilities, the principles guiding the business have remained unchanged. Discipline, perseverance, gratitude and humility continue to shape how Krust Krate operates each day. Above all, Melozaan credits her faith for keeping her grounded and focused on the bigger picture.

One of the most rewarding aspects of the journey has been hearing from customers who have incorporated traditionally fermented sourdough into their daily lives. For Melozaan, those moments serve as a reminder that the bakery’s impact extends beyond simply selling bread.

Looking ahead, her ambitions are as carefully crafted as her loaves. She dreams of opening a bakery and coffee shop where customers can enjoy freshly brewed coffee, handcrafted pastries and sourdough products in a warm, welcoming environment. It is a vision that reflects the essence of Krust Krate itself, a place where quality, community and craftsmanship come together.

For aspiring entrepreneurs, her message is simple, start before everything feels perfect. Success, she believes, is built through consistency, hard work and a willingness to learn along the way.
