SHACK EXPRESS – Coffee & Art is the perfect country-style eatery for those who want to feel like they’ve escaped the city while remaining in it. We can easily define their food as homely, heart-warming and belly-filling … the kind of nosh that is well worth the drive. We were hugely impressed by their simple menu – not too many choices but enough to cater for everyone’s taste. Smashing breakfasts, consistently good coffee, Cheezas, a Shack-style burger (made with a freshly baked waffle instead of a bun), gourmet shakes (think lavender and rose or coconut Lindt!) and cake tasting platter are well renowned. A lovely nursery offers a perfect excuse to do some plant shopping, not to mention the home décor shop – there’s local hand-made and painted art, antique finds, pots, concrete décor, chalk paint … the list is endless! Cheeza with bacon, feta
and peppadew

INGREDIENTS:
1 slice of bread (any of your choice); 250ml grated Cheddar; 45–60ml tangy mayonnaise; 1 spring onion (green and white parts), finely chopped; 125ml chopped bacon; 125ml roughly chopped peppadews; Danish feta; salt and pepper to taste
METHOD:
Heat the oven to 160°C.
Fry the bacon until cooked.
Mix the cheese, mayo, spring onion, salt and pepper well.
Spread a little butter on the slice of bread. Spoon the mixture onto the slice of bread as evenly as possible, ensuring that you cover the bread right to the edges.
Place the bread in the oven for about five minutes or until the cheese in the centre starts to melt. Top with the peppadews, bacon and feta. Garnish with microgreens.
