Easy-peasy high protein one tray chicken bakes

With the weather warming up, now is a good time to switch up your eating habits and say goodbye to comfort food and hello to high protein meals.

Fun fact… Chicken is a highly efficient source of protein but did you know it can also positively affect your mood, as it contains tryptophan, an amino acid that helps boost serotonin, the “happy hormone”.

We have two bakes perfect for meal prep or feeding a family of four.

Red pesto chicken and rice bake

You’ll need: 500g chicken breast (cubed), 200g rice, 300g cherry tomatoes, 2 peppers of your choice (sliced), 200g zucchini (chopped), 150g sun dried tomato pesto, 350ml chicken stock, salt and pepper to taste.

Add all the ingredients into an oven dish starting with the rice, then the tomatoes, peppers, zucchini, chicken breasts, sun dried tomato pesto, stock and salt and pepper. Give it a good mix, cover with foil and pop into the oven at 200 deg for an hour. Leave to rest for 15 minutes and enjoy.

Chicken, chickpea and potato bake

600g chicken thighs, 750g baby potatoes, a can of chickpeas, 2 peppers, 25ml olive oil, 4 garlic cloves (finely chopped), 2 lemons, 1 Tbsp paprika, 1 Tbsp rosemary, 1 Tbsp salt, 1 Tbsp pepper.

Add potatoes, chicken thighs, peppers, chickpeas into a large oven tray. In a bowl, mix olive oil, paprika, rosemary, garlic, garlic, salt, pepper and the juice of one lemon squeezed. Drizzle the mixture over the chicken and mix well. Bake on 180 deg for an hour.
