Chicken and Macadamia Curry

This curry, which serves four, takes just 15 minutes to prep, and 25 minutes to cook.

You’ll need: 50ml macadamia oil; 1.5kg chicken thighs, skin removed and diced; 1 onion, finely diced; 2 garlic cloves, crushed; 1 teaspoon grated ginger; ½ teaspoon turmeric; ½ teaspoon ground cumin; ½ teaspoon ground coriander; pinch chilli powder; 500ml macadamia milk; fresh coriander for garnish.

To make: Heat the macadamia oil in a large saucepan or wok. Sauté the onion, garlic and ginger until softened, then add the spices and cook until fragrant. Add the chicken and cook while stirring for about five minutes. Pour in the macadamia milk, bring to the boil, then reduce to a gentle simmer until the chicken is cooked through. Season to taste and serve with rice, garnished with fresh coriander.

Wild Macadamia Porridge

Serves 1
Prep time: 5 minutes

You will need: ½ cup raw macadamia nuts; ½ cup macadamia milk; 1 tablespoon maple syrup or agave nectar; pinch cinnamon; ¼ teaspoon vanilla extract; ½ pear or apple, cored; pinch salt; 1 tablespoon sprouted wild rice, optional.

To make: Pulse the pear or apple in a food processor until it reaches your preferred consistency and transfer to a bowl. Pulse the macadamia nuts until crumbly and add to the bowl. Stir in the macadamia milk, maple syrup, cinnamon, vanilla extract and salt. Adjust sweetness to taste and top with fresh fruit, coconut or seeds if desired.

Spiced Macadamia Hot Cacao

Comfort in a mug. This takes just five minutes to make, and serves one.

You’ll need: 1 pinch cardamom powder;
1 pinch cinnamon powder;
2 teaspoons raw cacao powder;
1 tablespoon honey, or to taste;
1½ cups macadamia milk.

To make: Combine the cardamom, cinnamon, cacao powder and honey in a mug. Add a tablespoon of boiling water and stir until smooth. Heat the macadamia milk in a saucepan or milk steamer, then pour over the cacao mixture. Stir well and serve immediately with an extra sprinkle of cinnamon if desired.
